DC resistance vs AC nominal impedance...

When Dietrich says wound to 8 Ohms he means Impedance I believe. That way, you could use the head with any standard home stereo amplifier. When winding to 8 Ohm Impedance, you coil should read between 5.6 and 6.4 ohm DC resistance. Rule of thumb is DC Resistance is 70% - 80% of AC Impedance.
If you want to use a head like this with any old amplifier then you would want to up the resistance from the original spec. Most stereo amplifiers are made to work with 8 Ohm Impedance speakers.
If you tried to use the head wound to original specs on a standard amplifier made to work with 8 Ohm Impedance speakers, the amp would overheat. If there is no protection circuit, it might damage itself. Also, you would likely fry the coil in the cutterhead more easily this way as well.

Most Grampian's impedance was 8ohm from the half a dozen that have come my way-and yes winding them for 8ohm makes the ability to use a nice clean off the shelf solid state amp for cutting much easier to do.
I do believe the Gotham cutting amps made to go hand and hand with the Grampians can run 8 or 16.
