I have a T560 from Souri.
I want to get rid of the mixer.
Whats the best alternative set ups?

I think a lot of people use the BigKnob by Mackie. I think the easiest way is to get a monitor controller with a queue send that is unaffected by the main monitor knob (basically splits the signal one for monitoring and one output unaffected). Needs to have 1-2 outs and 2 inputs (one for your source signal and one for record player playback). Split the signal out of the queue for your level meter. Good Luck!
